Butter Pecan Ice Cream
This one is a special treat for those of you on an SCD, paleo or lactose free diet. Of course, anyone can enjoy!
Yield: 4 Servings
Ingredients
- 4 egg yolks
- 1 1/4 cup water
- 2 tbsp almond butter
- 100 grams ground, toasted pecans
- 1/3-1/2 cup honey
- 1 tsp. vanilla extract
- Pinch of.salt
- 50 grams chopped, toasted pecans
Directions
- In a food processor, process all ingredients except chopped pecans until very smooth.
- Pour mixture into a pan and freeze in a flat layer until completely frozen.
- When frozen, reprocess until smooth and mix in the chopped pecans.
- Freeze until serving.
These nifty little bowls are perfect for a serving of ice cream. Mix up the
colours for more fun!
