RACHEL'S CHOCOLATE CHIP COOKIES
My cousin Rachel gave me this recipe - it's my all-time favourite never-fail cookie!
INGREDIENTS:
- 2 cups brown sugar
- 2/3 cup sugar
- Scant 1 cup oil
- 4 eggs
- 1 teaspoons vanilla extract
- 4 cups plus 4 tablespoons flour, divided
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 1/2 cups chocolate chips
DIRECTIONS:
- Preheat oven to 350° F
- Grease, or line 2 cookie sheets with parchment paper.
- Beat sugars, oil, eggs and vanilla extract until well combined.
- Add half the flour, baking soda and salt, and mix well.
- Add the chocolate chips
- Add the rest of the flour
- Using a cookie scoop or your hands, form about 1 inch balls. (Or larger, if you like bigger cookies!)
- Place 1 inch apart on prepared cookie sheets
- Bake for 12 - 14 minutes
Makes about 4-6 dozen, depending on the size.
Tip: Stash them away as soon as they cool, if you don't want them eaten up on the spot!
