RACHEL'S CHOCOLATE CHIP COOKIES

My cousin Rachel gave me this recipe - it's my all-time favourite never-fail cookie!

INGREDIENTS:

  • 2 cups brown sugar
  • 2/3 cup sugar
  • Scant 1 cup oil
  • 4 eggs
  • 1 teaspoons vanilla extract
  • 4 cups plus 4 tablespoons flour, divided
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 1/2 cups chocolate chips

DIRECTIONS: 

  1. Preheat oven to 350° F
  2. Grease, or line 2 cookie sheets with parchment paper.
  3. Beat sugars, oil, eggs and vanilla extract until well combined.
  4. Add half the flour, baking soda and salt, and mix well.
  5. Add the chocolate chips
  6. Add the rest of the flour
  7. Using a cookie scoop or your hands, form about 1 inch balls. (Or larger, if you like bigger cookies!)
  8. Place 1 inch apart on prepared cookie sheets
  9. Bake for 12 - 14 minutes

Makes about 4-6 dozen, depending on the size.

Tip: Stash them away as soon as they cool, if you don't want them eaten up on the spot!
